Caribbean Chicken Kabobs

This week I decided to cook on a Monday! I wanted something sweet and fruity so this recipe with pineapple was absolutely perfect! I just cut up some chicken, marinated, stuck on kabob sticks, and cooked! The chicken ended up being pretty sweet so I would use less cinnamon then I did this time. I also broiled the chicken on the kebabs and they turned to very tender!

Tools

  • Cutting Board
  • Knife
  • Lemon/Lime Juicer
  • Medium Sized Bowl
  • Whisk
  • Skewers
  • Barbecue or Broiler

Ingredients

  • 1/2 pound of chicken (serves 1)
  • 1 lime
  • 1 tablespoon sherry
  • 1 tablespoon light brown sugar
  • 1 teaspoon ground cinnamon
  • 2 cups of pineapple

Instructions

  1. Cut the chicken into bite sized chunks.
  2. Juice the lime and put into a bowl. Add the rest of the ingredients except the chicken and whisk together.
  3. Combine the chicken and marinate and toss well. Then cover and marinate in the fridge for 1 hour.
  4. Put the chicken and pineapple onto the skewers, alternating between chicken and pineapple.
  5. Put the kebabs on the grill or under a broiler for 8-10 minutes.
  6. Enjoy!
